To create a delightful meal of Egg Roast to accompany Almir Appams, start by preparing the appam batter. In a mixing bowl, combine the Almir Appam Mix with water according to the package instructions. Stir well until a smooth batter forms, ensuring there are no lumps. Allow the batter to rest for a while to ferment and develop its characteristic flavor.
While the appam batter is fermenting, proceed to make the Egg Roast. Begin by boiling the eggs until they are hard-boiled, then peel and set them aside. In a pan, heat oil and add thinly sliced onions. Sauté the onions until they turn translucent, then add chopped tomatoes, green chilies (if using), finely chopped ginger, minced garlic, and curry leaves. Cook until the tomatoes soften and the mixture becomes fragrant.
Once the tomato-onion mixture is cooked down, add the boiled eggs to the pan. Sprinkle turmeric powder, red chili powder, coriander powder, garam masala powder, and salt over the eggs and the mixture. Gently toss the eggs to coat them evenly with the spices and allow them to cook for a few minutes until the flavors meld together. Garnish the Egg Roast with fresh coriander leaves for added freshness and aroma. Serve the flavorful Egg Roast hot alongside the soft and fluffy Almir Appams for a satisfying meal that’s bursting with flavors and textures.
